The Restaurant

All our ingredients are freshly selected from local farms and co-operatives that support farming communities and sustainable farming methods, just as we do ourselves. It’s better for our wellbeing, our soil and our future. The Restaurant’s chefs cook six ways – Wok, Tandoor, Grill, Smoke, Bake & Slow.

SALT Bakery

This is where to find artisanal breads and pastries, slow-fermented and always straight from the oven. Our bakers unite the traditional flair of French breadmaking with the incredible flavours of Mauritian fruits. There’s homemade nut butter, tropical jams, and seasonal marmalades. And there’s our freshly-roasted, barista-brewed coffee blend (Brazil, Guatemala, Ethiopia) served 24 hours a day, 7 days a week.

SALT Farm

Just five minutes from the hotel, our farm is our own source of freshly-picked ingredients. We grow mushrooms from coffee grounds and organic fruit and vegetables, harvest honey from our beehives, and grow herbs using hydroponics. Our rustic vegetarian restaurants connects you to the agricultural culture, and our farm workshops share the secrets of making delicious plant-based dishes. And beautiful green juices. Wellness talks, gardening classes, and yoga tuition (in our yoga hut) go hand-in-hand with it.

The Rooftop Bar

Our rooftop bar overlooking the ocean is the perfect, relaxed aperitivo spot. There’s a dreamy selection of cocktails crafted by our bartenders who were inspired by the mountains of the island.

The Beach Bar

A hangout on the white sands of Palmar beach for freshly prepared Mauritian snacks and lagoon-inspired cocktails.

The Pool Bar

This is the place to sample all the best craft beers brewed on the island, and sip cocktails inspired by the places and ingredients found on the mainland.

Skill Swap

The mantra of this activity is to teach whatever you can teach. Through learning a local skill such as pottery, fishing, basket weaving or learning local instruments. You’ll have the opportunity to take part!

SALT Equilibrium

This is more than a Spa, it’s a concept that focuses on simple techniques and through the use of the humble salt, you’ll feel energised, detoxified and hydrated. It’s a first on the island making this completely unique and something we believe every guest should indulge in at least once!

Making a Difference

SALT of Palmar have partnered up with the Non-profit organisation, Island Bio by empowering them through three-year skill-building programmes followed by training in permaculture and agro-ecology. The farm that is part of the accommodation gives a percentage of the crop to the local village. This furthers the SALT of Palmers belief that fresh, high-quality food is the right of each and every Mauritian citizen.
